The Cowboy Cut Ribeye is a thick bone-in steak that will serve two. These steaks are 2.5 - 3.5" thick, the bigger the weight you select, the thicker the steak.
Cook by reverse searing. Place your steak in the oven at 225 for 30-50 minutes, depending on thickness of your steak. If you have a smoker, you can use that instead of the oven. When the meat is ready to come out of the oven or smoker, heat a cast iron skillet or your grill to high temperature. Add olive oil to the pan, add your steak and sear for one minute on each side. Add butter for more flavor. Let rest 10 minutes and serve. Safe internal temperature is 130-135 for beef. Enjoy!
