We are proud to announce our very first custom recipe sausage! Made with a chef-designed blend of spices and our pasture-raised, heritage pork, these andouillie pinwheel sausages are not only wonderfully flavorful, but competly unique.
Andouille is rich, smoky staple of Cajun and Southern cuisine. It pairs well with all manner of beans and greens (mustard or collard are our favorites). It is the traditional sausage used in gumbo, jambalaya, and cajun shrimp boils.
Try it paired with butternut squash in a hearty soup, with roast potatoes, or with shellfish. Andouille is an easy way to take a quick and simple week night meal with vegetables and rice from bland to bold.
