It's not what's IN your pork, but what's NOT in your pork that matters.

Have you ever looked a the ingredients in your grocery store pork sausage?

“ Pork, Water, Contains 2% or Less of: Salt, Dextrose, Vinegar Powder, Sugar, Spices, Natural Flavors, Collagen Casing. Flour. Oatmeal. Apples. Leeks. Maltodextrine. Breadcrumbs. Sorbates. Sulfides. Nitrites. Benzoates.”

This isn't from a single sausage recipe, but is a list of some of the most common fillers and additives present in sausages and patties.

What's in SkyPilot Sausages?

Pork or lamb. salt. Spices. Gelatin casing.

No preservatives, no fillers.

Our bacon, however, is made with nitrite preservatives as there is a complete lack of alternatives in our area. However, we have made connections to other processing facilities that can produce clean bacon and hams. We aren't large enough yet to meet their processing minimums, but will pursue this relationship as we grow and look for more ways to provide clean food to our local community.
